 Holidays fast approaching and now come and gone is still one of the most challenging for all people who strive to keep good health all year  round  not to mention our pocket books, billions are spent this time of the year on every product imaginable i could go into this further but u get the picture.

 Diabetes is a lifelong condition for individuals whose bodies either do not have enough or do not respond properly to insulin, a hormone responsible for turning glucose (blood sugar) into energy. Sugar-free varieties of almost everything are widely available in major grocery stores, or look for those sweetened with sugar alternatives like sucralose (Splenda), stevia (Truvia), saccharine (Sweet N’ Low), or aspartame (Equal). If you’re baking yourself, you can use those same sugar alternatives in any recipe. When in doubt, ask your guests with dietary restrictions what they can and can’t eat; you can work together to find something and help all your guests enjoy the festivities. Even if you or your loved ones don’t suffer from any food allergies or chronic conditions, everyone can benefit from a little healthier eating.

Cranberry Holiday Mould

  "I know do not let the tittle get the best of you.. here it is as follows"

 2 cups (500ml) boiling water
    2 (3-oz./85) pkg. cranberry-flavored gelatin
    1 1/2 cups (325ml) cold mandarin-orange flavored sparkling water (or similar flavored)
    1 Tbsp. (15ml) orange zest
    10 strawberries, stemmed and halved
from Weight Watcher's 50th Anniversary

    1 Granny Smith apple, peeled, cored and cut into 1/2-inch (2.5cm) cubes
    1/3 cup (75ml) walnuts, finely chopped

Directions:

Spray a 6-cup (1.5L) bundt pan or bowl with non-stick spray.

Combine boiling water and gelatin in a medium heatproof bowl, stirring until completely dissolved. Stir in sparkling water and orange zest. Refrigerate until thickened but not set, about 2 hours.

Stir in strawberries, apple an walnuts. Transfer mixture to bundt pan or bowl and refrigerate until mold has set, at least four hours or overnight.

To un mold, dip pane or bowl in a large bowl of warm water for 15-20 seconds. Wet a spoon with water then gently loosen gelatin from sides of pan with spoon. Place a serving plate on top of pan, then invert. Shake slightly to help free gelatin, and gently lift off pan. Serves 8.

Each serving is about 128 calories, zero fat, 24 grams of carb, 1 gram of fiber.
